Dark Chocolate Peanut Butter Caramel Corn

Caramel Corn Coating:

2 tablespoons vegetable oil
¼ cup popcorn kernels*
¼ cup unsalted butter
¾ cup sugar
¼ cup golden syrup
¼ teaspoon coarse salt
¼ teaspoon baking soda
¼ teaspoon vanilla extract

Spray a metal sheet tray with cooking spray. Heat up vegetable oil in a large pot with a lid over medium high heat. Add popcorn kernels and cover with a lid. Shake the pan lightly back and forth as kernels pop. Once popcorn has popped, pour it into a large heatproof bowl. Let cool. Remove all unpopped kernels. Melt butter over medium heat in a small pan. Add sugar, golden syrup, and salt to pan. Heat the sugar mixture until it is medium golden brown, about 290F. Whisk in baking soda and vanilla extract. Pour hot syrup over the cooled popcorn, and carefully fold together with a wooden spoon (a rubber spatula could melt). Quickly pour the coated popcorn onto the sheet tray. Using the wooden spoon, spread the caramel corn to the edges of the pan. Let cool completely before breaking into small pieces into a large bowl.

*If kernels are old, place them in a bowl of water for ten minutes. Drain, dry, and proceed with instructions as usual.

Dark Chocolate Peanut Butter Coating:

1/4 cup honey
1/4 cup golden syrup
1/3 cup sugar
1/2 cup dark chocolate peanut butter, such as Dark Chocolate Dreams Peanut Butter
1/2 teaspoon vanilla extract
One recipe of Caramel Corn

Spray a metal sheet tray with cooking spray. Bring honey, golden syrup and sugar to a boil in a small pot. Reduce heat and let simmer for two minutes. Stir in dark chocolate peanut butter and vanilla. Pour mixture over caramel corn and coat well before pouring out onto the sprayed sheet spray. Spread coated popcorn to the edge of the pan. Let cool completely before breaking the popcorn into pieces and storing in an air tight container or plastic bag.
