Red Bean Paste

1 cup dried red beans
5 cups water
1/4 tsp salt
¼ cup sugar

Rinse red beans and sort out the discolored beans or those that float to the top of the water. Cover beans by a couple of inches of water and soak them overnight in a covered container. Discard water. Briefly blanch the beans in a medium sized pot of boiling water for about a minute. Drain and discard water. In a medium sized pot, add beans, salt and 5 cups of water, and bring them to a boil. Reduce to low heat and simmer until ½ cup of the liquid remains. It takes about 1 1/2 hours, stirring every 15 minutes or so. Add sugar, and stir to combine. Using an immersion blender, blend the beans until smooth. Continue to cook beans until they are thick and the mixture holds its shape. Store in an airtight container in the fridge.
