Pecan Bars

Crust

4 cups flour

2 tsp baking powder

½ tsp salt

2 cups brown sugar

2 cups melted butter

Filling

4 cups brown sugar

½ cup flour

6 cups finely chopped pecans

8 eggs

1 T. vanilla

Preheat oven to 350F. Combine all dry ingredients for the crust in a medium bowl. Add melted butter. Line and spray 2 9×13″ pans. Press the dough evenly into each pan. Bake until it’s golden brown and it springs back to the touch, about 10 minutes. Let cool while you prep the filling. Combine dry ingredients in a medium bowl. Add eggs and vanilla extract. Divide the filling,  pour over crust and spread evenly. Bake until deep brown and very firm to the touch, about 35 minutes. Let cool to room temperate before cutting. Store in an airtight container for up to 1 week.
