6 large unfilled cannoli shells

1 cup ricotta cheese, excess liquid removed (you don’t need to drain it through a cheesecloth)

1/2 cup mascarpone cheese

1/3 cup powdered sugar

1 teaspoon vanilla bean paste

1 teaspoon orange zest

1/4 cup shaved dark chocolate

Chopped nuts, sprinkles, etc. for garnish


Combine ricotta cheese and mascarpone in the bowl of a stand mixer with a whip attachment. Add powdered sugar and mix until thoroughly combined. And then add the remaining ingredients, and mix until combined. Pipe into shells using a large star tip. Garnish one end of each cannoli, if desired. Store in the refrigerator in an airtight container for up to 3 days.
