Apple Almond Crunch Muffins (Vegan and Gluten-Free)

Here I am again, regretting how long it’s been since I last posted. I’ll try to be better, promise!

I’m having so much fun making allergen-free desserts; I can’t seem to stop! I promise I’ll post some more traditional baking recipes soon though. I have some pretzel bagels that I can’t wait to share…

Anyway, I love these muffins. Again, no weird or hard to find ingredients, no convoluted method or special equipment needed. Just moist, flavorful muffins that you can share with your loved ones without worry. Enjoy!

 

Apple Almond Crunch Muffins

 

1 1/3 cups ground almonds (or almond flour for a smoother texture)

1 1/2 cups gluten-free all purpose flour

1 cup natural sugar

1/2 teaspoon kosher salt

2 teaspoons gluten-free baking powder

1/2 teaspoon baking soda

1/4 teaspoon xanthan gum (optional)

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

Zest of 1/2 orange

3 Tablespoons vegetable, canola, or grapeseed oil

1/4 cup sweet potato puree (or your favorite egg substitute for 1 egg)

3/4 cup warm almond milk

1 granny smith apple, cored and grated with skin on

 

For Muffins: Preheat oven to 350F. Line cupcake pans with 15 liners. Combine ground almonds, GF flour, sugar, salt, baking powder, baking soda, xanthan gum, and spices into a medium bowl. Combine orange zest, oil, sweet potato puree, and almond milk in a small bowl. Add wet ingredients to dry ingredients and mix just until combined. Stir in grated apples last. Scoop muffin batter into lined cupcake pans until they are about 3/4 full. Evenly divide crumble on top of muffin batter. Bake in preheated oven until a toothpick inserted comes out cleanly, about 20-25 minutes. Allow to cool to room temperature before storing. For best flavor, allow muffins to rest for at least 8 hours at room temperature in a container or zipper bag.

 

Crumble

 

1/4 cup natural sugar

2 Tablespoons ground almonds or almond flour

1/2 teaspoon ground cinnamon

1 cup sliced almonds

1 Tablespoon vegan margarine or grapeseed oil

 

Combine all ingredients in a bowl right before crumbling onto muffin batter.
