A New Year, A New Look! And… Broccoli Cheddar Bites


Well, it’s been far too long since I’ve posted anything agaaaaaain. Lots of things have changed since I’ve last posted. I have a boyfriend now (FINALLY, I KNOW) and he has two awesome kiddos. He’s an amazing chef, and with our skills combined, WE WILL RULE THE WORLD!!! Ahem, I mean…we will make beautiful food music together.

Now, onto the goodies! We just made these for lunch today with some fresh sliced bell peppers (because we wanted to eat MORE dressing, naturally), but they’d make a great snack/party food.

Broccoli Cheddar Bites

Yield: About 25-1 Tablespoon servings

1 cup Carrots, shredded
3 cups Broccoli Florets
1 Garlic Clove
2 Eggs
1 cup Seasoned Breadcrumbs, Almond Flour (for gluten free), or Panko
¾ cup Shredded Sharp White Cheddar Cheese
½ teaspoon Onion Powder
½ teaspoon Black Pepper, ground
2 tablespoons Neutral Flavored Oil, such as Grapeseed (preferred), Canola, or Vegetable
Grate or shred carrots by hand or with a shredding attachment in a food processor. In a small bowl, steam broccoli in the microwave for two minutes or until tender. Place shredded carrots, steamed broccoli, garlic, eggs, breadcrumbs, cheese, onion powder, and black pepper in food processor and pulse for 15 seconds or until well combined. Mixture should form easily into a ball. If it’s too crumbly, add water one teaspoon at a time until you achieve the desired consistency. Form mixture into balls, about a tablespoon each, preferably with a cookie scoop. Flatten slightly into round discs about ½-inch thick (it’s less messy if you spray your hands with cooking spray or water first). Heat oil in a skillet on medium high heat. Arrange nuggets in skillet and cook about 2 minutes each side, or until golden brown and crispy. Serve with honey-mustard sauce, ketchup, or Shay’s Greek Yogurt Ranch Dressing.


Shay’s Greek Yogurt Ranch Dressing

1 cup Nonfat Greek Yogurt

1 1/2 Tablespoons Buttermilk Powder

Juice from 1/4 of a Lemon (about 1 Tablespoon)

1/2 teaspoon Agave Syrup

2 Tablespoons Chives, finely chopped

1/2 teaspoon Dill, dried

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1/2 teaspoon Salt

1/2 teaspoon Black Pepper, ground

2 drops Hot Sauce (preferably Tabasco)

Combine all ingredients and allow to sit for 30 minutes to develop flavor. Store in the fridge and try not to eat it all at once!

  1. Just the list of ingredients makes me want some! I especially love the idea of a dipping sauce. The photos are lovely–that brown on the outside suggests wonderful crispiness!
